Ice Palace Poached Pears by Giles & Kami Kolakowski
Constructed of 5,000 tons of ice and 307,000 board feet of
lumber, it was the largest ice palace ever built on the North American
continent and the only one to have ever been fully utilized. It housed
enormous ice sculptures in the many rooms and had towers 90 feet tall.

1 cup dry
red wine
1/2 cup water
1/2 cup firmly packed brown sugar
1 cinnamon stick
1/2 teaspoon nutmeg
5 black peppercorns
1/4 cup honey
1 teaspoon vanilla extract
1 tablespoon lemon juice
4 Firm, ripe Bartlet or Bosc pears
Combine first 9 ingredients in a 3-quart
microwave-safe dish, microwave at high 3 minutes.
Peel and core pears, leaving stems intact. Slice
about 1/4 inch from base of each pear so it will sit flat. Add pears to
poaching liquid; cover and microwave at high 10 minutes, or until tender.
Serves 4.
