Raspberries spice up a glass
of sparkling wine nicely.

3 pints fresh raspberries
1 cup sugar
2 bottles (750 ml each)
sparkling wine or sparkling
water
1 lime, sliced for garnish
Puree the raspberries and sugar in an electric
blender or food processor. Strain through a fine sieve, pressing on the
pulp to extract the juice. Discard the pulp. Store the puree chilled in an
airtight container until ready to serve. To serve, place 2 to 3
tablespoons (30 - 45 ml) of the puree in each wine glass, fill with
sparkling wine or water, and garnish with a slice of lime.
