holiday meals

2 medium sweet
potatoes, peeled and cubed
1/4 cup milk
1 tablespoon honey
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1 tablespoon coconut, shredded and toasted
Place potatoes in saucepan and cover with
water. Bring to a boil. Reduce heat and simmer 20 minutes. Drain. Place in
a blender or food processor. Puree with milk, honey, cinnamon and vanilla.
Spoon into dessert dishes and top with coconut. Serve immediately.
