3-4 Vidalia onions
1 small can evaporated milk
salt and pepper to taste
1 cup crushed crackers
1 cup grated Cheddar cheese

Peel, and cut onion into large pieces. Sauté briefly. Mix onions with remaining ingredients in a casserole dish. Bake at 350 degrees for 20 minutes.
