German Potato Soup by Debbi

Rich and creamy, this
traditional German favorite is delicious.

12 medium potatoes, peeled and sliced
2 medium onions, diced
1 cup celery, diced
1 stick margarine
1 teaspoon black pepper
1/2 teaspoon salt
1 cup cream
1 quart milk
1/2 cup fresh parsley or 1 tablespoon dried
1/4 teaspoon dill weed (optional)
1/2 stick margarine
Sauté onions and celery in 1 stick of margarine.
Puree vegetables in the blender. Boil potatoes (barely covered in water).
Drain. Mash potatoes then add milk, cream, vegetables, onion-celery
mixture. Sprinkle with seasonings. Add remaining ingredients and heat to
serving temperature.
