| Chicken: 1/2 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons paprika
1 (2-1/2 to 3 lb) broiler-fryer, cut up
1/2 cup butter, melted
Sauce:
1 tablespoon soy sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup vegetable oil
1/2 cup lemon juice
2 tablespoons grated lemon rind
1 clove garlic, crushed
Combine all sauce ingredients, making sure to mix well. Refrigerate at
least 1 hour before using. While sauce is in the refrigerator, preheat
your oven to 400 degrees.
To prepare chicken combine the flour, salt, pepper and paprika. Roll
the chicken in the flour mixture to coat. Arrange chicken pieces, skin
side down, in a single layer in a shallow pan. Brush chicken with melted
butter. Bake, uncovered for 30 minutes. Turn chicken over and pour the
sauce over the chicken. Bake for 30 minutes longer or until chicken is
golden brown and tender. |
